This is what I made for Iftar yesterday, delicious lamb fry paired it with some cilantro lime rice and cucumber salad. A simple but very delicious meal.
Ingredients Lamb 500 g
Whole spices (cinnamon, cardamom, clove) Ginger garlic paste 1 tsp
Chopped green chilli 3 (2 while cooking, one for
garnish) Chopped coriander (handful)
Yogurt 2 tsp Salt to taste
Pepper 1 small tsp
Turmeric 1/2 tsp Red dhil powder 1 tsp (depends on spice level you
want)
Water as needed
Method:
Heat oil and then add the lamb along with whole spice and ginger garlic paste. Mix well and cook until lamb changes its colour.
now add chopped green chillies, coriander, spices and
yogurt. Mix well and cook for 4-5 minutes - add water cover the lid and cook until the lamb is tender. Check and stir occasionally. Add more water if needed. Lamb should be completely tender and the water should drain completely. It will take 30 minutes or more.
garnish with more green chillies and coriander and enjoy
