Ingredients:
For the dough:
1/2 cup warm milk (100ml),
2 tsp dry yeast
7 tbsp soft unsalted butter (80g),
1/4 cup sugar (50g)
1 whole egg
1 egg yolk
1/4 tsp cinnamon
1 tsp vanilla extract
1/2 tsp salt
3 cups all-purpose flour (350g)
For the filling:
1/3 cup soft unsalted butter (50g)
1 cup brown sugar (200g)
3 tsp cinnamon
Method:
Add warm milk and yeast together and stir. Allow the yeast to activate and becomes foamy, about 10 minutes.
In a bowl, mix the soft butter with the sugar first. Then add the egg, egg yolk, cinnamon, vanilla, salt and the yeast mixture, mix it together and finally add the flour and mix for 7-8 minutes until you have a soft and smooth dough.
Place the dough in a greased large bowl, cover with cling film and place in a warm area to rise for about three hours. The dough should double in size.
Prepare the filling, by mixing the brown sugar, cinnamon and soft butter.
After proofing, divide the dough in 6 pieces and then each piece again in three smaller pieces.
Roll the small pieces in an oval shape and spread a layer of filling and place another oval shaped dough patty on top, spread filling again and place the final patty on top. Three layers in total.
Cut two notches in the layered patty and with the three strips you can now braid the dough. Finally, roll the braided dough into a knot and place it in a greased spring form (9 inch or 24cm).
After you have done all 6 knots, cover the spring form with a cloth and let it rise again for another half hour. This is essential.
Before baking, brush the knots with egg wash (1 egg yolk, 2 tbsp milk) and bake them for 25 minutes at 175V (350F).
