These Lemon Blueberry Pancakes are delicious and brunch worthy!
This Pancake Recipe yields 8-10 pancakes
For this recipe you will need:
2 large eggs
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 cup granulated sugar
1/4 tsp salt
1 1/2 cups of fresh blueberries (make sure they are sweet!)
zest of a whole lemon
1/2 tsp vanilla
1/2 cup melted butter, unsalted
2 cups buttermilk
Blueberry Compote
1/2 cup water
1/4 cup sugar
zest of half a lemon
1/2 tbsp lemon juice
1 cup frozen blueberries
Maple Whipped Cream
1 cup heavy whipping cream
2 tbsp maple syrup
1/2 tsp vanilla
pinch of salt
