Pinakbet ilocano
Pinakbet ilocano is a Filipino vegetable dish composed of a variety of vegetables and usually topped with prawns or bagnet(crispy pork). For this recipe, i used frozen chopped okra since it is the only okra available in the shop nearby. I also used green beans instead of sitaw. I was not able to buy ampalaya, but this recipe would also be great with ampalaya in it.
Ingredients:
100g Pork
400g Prawns
200g Eggplant
300g Okra
100g Green Beans
1 Small Potato
1 Large Tomato
2 Cloves Garlic
1 Small Onion
1pc Shrimp Cube
2tbsp Bagoong
1tsp Salt
1tsp Pepper
2cups of Water
Method:
1. In a pan, boil pork in 2tbsp of water. Cover and simmer for 3 minutes or until water has evaporated.
2. In the same pan, heat oil. Sauté onion and garlic. Continue to cook until onion softens.
3. Add tomato. Cover and let it simmer for 3 minutes.
4. Add shrimp cube and mix well.
5. Add salt, pepper and bagoong. Stir and mix well. Add 2 cups of water. Stir and let it boil.
6. Add the sweet potato. Cover and let it simmer for 5 minutes. (You can mash the sweet potato in the pan. This will help thicken the sauce)
7. Add the eggplant, cover and simmer for 5minutes.
8. Add the beans and the prawns. Mix well. Cover and simmer for another 5 minutes.
9. Add the okra and mix well. Cover and simmer for extra 3-5minutes.
10. And it’s done! 😋 Transfer to a serving plate. Serve, share and enjoy! 😊
