Groundnut Kolambu (Peanut Gravy)
Ingredients
½ cup raw groundnuts (peanuts)
1 small onion, finely chopped
1 small tomato, chopped
3 to 4 garlic cloves
Small lemon-sized tamarind
1 tbsp sambar powder or 1 tsp chilli powder + 1 tsp coriander powder
¼ tsp turmeric
Salt to taste
1 tbsp oil
Tempering
½ tsp mustard seeds
½ tsp cumin seeds
Few curry leaves
1 dry red chilli
Pinch hing
🌶 How to Make It
1. Cook the groundnuts
Pressure cook peanuts with enough water and a little salt for 3 to 4 whistles until soft but not mushy. Keep the cooking water.
2. Tamarind base
Soak tamarind in warm water, extract thick juice and keep aside.
3. Temper the pot
Heat oil. Add mustard. Let it crackle like tiny fireworks. Add cumin, red chilli, curry leaves, hing.
4. Build the gravy
Add onion and garlic. Sauté until lightly golden.
Add tomato, turmeric, and salt. Cook till soft and pulpy.
Add sambar powder and sauté briefly.
5. Bring it together
Pour in tamarind extract and a little of the reserved peanut water. Let it boil 5 to 7 minutes until the raw tamarind smell disappears.
6. Add peanuts
Add cooked groundnuts. Simmer 8 to 10 minutes on medium until slightly thick. Adjust water for kolambu consistency. Taste and balance salt and spice.
Turn off and rest it 10 minutes. Kolambu always deepens like a story left to sit.
🌿 Optional Upgrade (Village Style Thick Version)
Grind:
2 tbsp coconut
1 tsp roasted cumin
2 to 3 cooked peanuts
Add this paste at the end and simmer 2 minutes. The gravy becomes silkier, richer, almost temple-prasadam level comforting.
🍚 Best Served With
Hot rice + sesame oil
Idli or dosa
Even chapati works surprisingly well
Nutty, tangy, slightly spicy. Not flashy. Just deeply satisfying.
