Ingredients:
For Chicken Marinade:
2 chicken thighs (with or without skin)
1 ½ Maggi cubes (no extra salt needed as Maggi cubes contain salt)
½ capsicum, finely chopped
A small handful of coriander and mint leaves, finely chopped
¼ tsp cloves
¼ tsp peppercorns
1 cinnamon stick
½ tsp ginger-garlic paste
A pinch of Kashmiri chili powder (for color)
A pinch of garam masala
Oil (a slightly generous amount for authentic flavor)
For Rice:
1 ½ cups mandi rice (soaked and drained)
½ Maggi cube
½ capsicum, finely chopped
Whole spices: cloves, cardamom, peppercorns, and a cinnamon stick
Salt, to taste
Toppings for Natural Color:
¼ tsp Kashmiri chili powder mixed with water (for a red hue)
¼ tsp turmeric powder mixed with water (for a yellow hue)
4 green chilies
Process:
1. Marinate Chicken:
In a kadai, mix chicken thighs with Maggi cubes (no need to add extra salt), capsicum, coriander, mint leaves, cloves, peppercorns, cinnamon, ginger-garlic paste, Kashmiri chili powder, garam masala, and oil.
Massage well and refrigerate for at least 30 minutes.
2. Cook Rice:
In boiling water, add ½ Maggi cube, chopped capsicum, whole spices, and required salt.
Add mandi rice and cook until 95% done. Drain and set aside.
3. Cook Chicken:
Heat the kadai with the marinated chicken and cook until the chicken is tender and slightly roasted in the oil.
Reserve some oil from the kadai for layering the rice.
4. Layer and Dum:
Add a layer of cooked rice over the chicken in the kadai.
Drizzle some reserved oil over the rice. Repeat with another layer of rice and oil.
Pour chili powder water (for red color) and turmeric powder water (for yellow color) on top as natural substitutes for artificial coloring.
Insert 4 green chilies at the sides of the rice.
Cover and cook on dum for 10 minutes.
