Video Cooking Demonstration and recipe for Passionfruit Butter or Passionfruit Curd.Made in the Thermochef this budget friendly home made versatile spread is excellent for spreading on toast, scones, crumpets or fresh bread. it can be folded through fresh whipped cream to fill a sponge sandwich or pastry tartlet cases. Do give it a try, its super easy and tastes amazing.
INGREDIENTS:
400 grams passionfruit pulp
4 eggs
300 grams sugar
250 grams butter (please use butter not margarine)
METHOD:
Place the sugar and butter in the Thermochef jug and mix for 3 1/2 minutes on speed 4 at 80 degrees. Scrape the sides down into the mix and add the passionfruit pulp speed 2 for 10 minutes at 80 degrees, While the machine is running drop the eggs in through the MC hole. Sterilise your jars in the oven and always make sure you have enough jars. Too many is better than not enough. Place a glass plate into the fridge to chill. We will be using this to check the setting level of our Passionfruit Butter. Don't forget it will thicken more as it cools. You want it to hold its shape when you drag your finger through it on the cold plate.
After about 10 more minutes on speed 2 at 80 degrees it should be getting close. Test again. Now put the temperature to 90 degrees for about 5 minutes and get your jars ready. Never leave the mix to sit without moving the blade otherwise the mix will stick to the bottom, burn or separate.
Decant immediately into jars. allow to cool and store in the fridge. Thats it ready to enjoy from go to whoa in under an hour and the Thermochef did all the work.
