Basanti pulao is a traditional Bengali dish prepared during Bengali New Year and during festivals and special occasions. This aromatic and bright yellow coloured rice is flavoured with Ghee, Whole Spices and Raisins & cashews which add a aromatic flavour into the air.
Basanti pulao is also known as Bhoger mishti pulao or holud pulao. Traditionally this dish is prepared with gobindobhog rice but here we used Basmati Rice.
Ingredients:
2 cup basmati rice, washed and soaked in water
4 tbsp ghee or clarified butter
1 tsp turmeric powder
2 tsp sugar
2 Finely Chopped garlic
Salt to taste
1 tbsp raisins
1 cup cashews
4 cloves
1-inch cinnamon stick
2 small bay leaves
4 green cardamoms
4 cups water
