This classic homemade meatloaf is tender, juicy, and packed with flavor thanks to finely chopped vegetables and a gentle mixing method. Inspired by Chef John’s @foodwishes technique, this comforting meatloaf is perfect for family dinners and pairs beautifully with mashed potatoes and gravy.
In this video, I’ll show you how to build moisture into the meat, shape the loaf properly, and finish it with a tangy, sweet glaze that bakes right onto the top.

🧾 Ingredients
Meatloaf
1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped
4 white mushrooms, coarsely chopped
3 cloves garlic, coarsely chopped
2½ lb ground chuck
1 tbsp Worcestershire sauce
1 egg, beaten
1 tsp dried Italian herbs
2 tsp salt
1 tsp ground black pepper
½ tsp cayenne pepper
1 cup plain bread crumbs
1 tsp olive oil
Glaze
2 tbsp brown sugar
2 tbsp ketchup
2 tbsp Dijon mustard
Hot pepper sauce, to taste
🍳 Directions (Step-by-Step for Video)
Preheat oven to 325°F (165°C).
Add carrot, celery, onion, red bell pepper, mushrooms, and garlic to a food processor.
Pulse until very finely chopped, almost a paste.
Transfer vegetables to a large mixing bowl.
Add ground chuck, Worcestershire sauce, and beaten egg.
Sprinkle in Italian herbs, salt, black pepper, and cayenne.
Gently mix with a wooden spoon just until combined.
Add bread crumbs.
Using your hands, gently mix with fingertips until just incorporated (about 1 minute).
Form the mixture into a ball.
Pour olive oil into a baking dish.
Place meat in the dish and shape into a loaf about 4 inches high by 6 inches wide.
Bake for 15 minutes.
Meanwhile, mix brown sugar, ketchup, Dijon mustard, and hot sauce in a small bowl until smooth.
Remove meatloaf from oven and spoon glaze over the top, pulling some down the sides.
Return to oven and bake 30–40 minutes more, until internal temperature reaches 160°F (70°C).
Rest meatloaf for 10 minutes, then slice and serve.
