What’s for dinner? Lieutenant Wesley Echevarria from Station 27 in West Park prepared one of his firehouse favorites: Lemon Chicken Piccata. During their long shifts, our firehouse crews work, live and eat together as a family. Many of these firehouses have a “chef” who takes on cooking for the crew.
Recipe
Lt. Wesley Echevarria’s Chicken Picatta
Ingredients:
-2 skinless and boneless chicken breasts
-Salt & freshly ground black pepper
-Flour for dredging
-1 stick of butter
-1 cup of Chicken broth
-Juice of ½ lemon. (Garnish with the other half)
-4 garlic cloves, minced
-½ cup of brined capers
-Parmesan cheese
-Parsley for garnish
Sliced mushrooms (optional)
-Red pepper flakes (optional)
Instructions:
-Butterfly the chicken breasts, cutting in half horizontally
-Pound the breasts flat under a sheet of wax paper
-Season the breasts with salt and pepper and then dredge them in flour
-Melt a ½ stick of butter on medium heat
-When the pan gets hot, sauté the chicken breasts in the butter until lightly golden brown (about 3-4 minutes on each side)
-Remove the chicken breasts from the pan and set aside
-Without discarding pan contents, add remaining butter, minced garlic, lemon juice, and chicken broth
-Bring to a boil
-Return chicken breasts to pan and reduce heat to simmer
-Add parmesan cheese and capers.
-Garnish with lemon slices and parsley
-Plate, serve, and enjoy!
