Catching Redfish in the Creeks of North Florida and cooking up some amazing, blackened fish tacos. During the week after Christmas, I was out of the woods and on the water for several days of fishing with my family and friends. It was great to have professional angler John Hoyer (National Walley Tour Champion 2x and Pro Musky Tournament Trail Champion 2x) in town to get after some fish and then enjoy a taco night at my house. John and his father and my Pastor (retired) Phil Hoyer joined us for an action-packed day on the Intracoastal Waterway and Creeks throughout Ponte Vedra Beach and Jacksonville, Florida. We used both artificial and live bait (mud minnows and shrimp) and were in the fish from the start. We were able to catch trout, flounder and redfish and were successful enough for a good meal of Blackened Fish Taco's cooked up by John.
John and Phil met me at a private dock in Marsh Landing and we headed to Palm Valley Outdoors for a live bait pickup. Phil was the first to land a fish (trout) and he and John went back and forth much of the day catching flounder and redfish. As the tide rose, we slipped deeper into the small creeks and found success with a popping cork rig and live bait. John shared that the guides in Venise, La. would swear by a popping cork, 18 inches of leader, and a 1/8th ounce jig head topped with shrimp. In the shallow waters here in the North Florida Creeks, it was the secret formula we needed. John hooked up with a nice 21 incher (fish need to be in the 18" - 27" "slot" to be kept) which rounded out our fish for tacos. The prior day, my daughter Lauren and boyfriend Josh joined me on the boat, and we really hooked into nice slot sized fish and had a total of 4 keepers at the end of that day for tacos.
The day was beautiful, and the company was great as we headed back to my house for some of Johns famous fish taco's. My wife Lisa and good friends Randy and Corbie enjoyed the festivities. John made up his special taco sauce and seasoned the fish up perfectly. His toppings to include cole slaw, cheese and tomatoes made for the perfect taco. Delicious!! Great job John. We enjoyed the remainder of the evening showcasing our "bags" skills and John and I took on Randy and Phil in corn hole. Naturally, John and I won! Was that in question?? For those new to the channel, I took an early retirement package as a regional president of a bank back at the end of September. I’ve been enjoying all of my outdoor adventures and continue to ponder how I might be able to align my passion for coaching and mentoring teammates with my love of the outdoors. Likely I need a little more time in a tree stand or on the water to think on it…... 😊
Randy and I recently purchased 180 acres of land in Central Georgia (congrats to those Dawg's on the National Championship last night). I'll post a video shortly of the end of deer season (we've got some nice bucks).
