In this video my Korean mama (Janet) shows us how to make a braised lotus root side dish (banchan) called "yeungeun jorim". This dish is a sweet and savory earthy dish that tastes of soy, sesame, and garlic. Best served cold with a bowl of rice, but hot and fresh is also very yummy. I tried my best to capture her measurements but in the end you can adjust the flavors to your liking (she cooks by feel and basically always turns out perfect!).
Ingredients:
lotus roots - 1lbs
salt -
vinegar
water - 1 cup
soy sauce - 2-3 tbsp
sugar - 2 tbsp
garlic - 3 tbsp
beef dashida - 1/4 tsp
canola oil - 2 tbsp
sweet syrup - 3 or 4 tbsps
