Earl Grey Banana Bread Recipe (eatsbyellaa)

Ingredients:

240g ripe banana

90g light brown sugar

50g white sugar

80g neutral oil (i’m using canola)

70g sour cream

3 tbsp earl grey (from 3 teabags) + 3 tbsp hot water

1 tsp vanilla extract

185g plain flour

3/4 tsp baking soda

1/2 tsp baking powder

pinch of salt

Earl Grey Glaze:

icing sugar

earl grey-infused milk

Method:

Preheat the oven to 325F f

Steep the earl grey in hot water and set aside.

In a bowl, whisk together the mashed banana, oils, sugars, sour cream, and vanilla.

Stir in the earl grey mixture.

Sift in the dry ingredients (flour, baking soda, baking powder, pinch of salt) and fold gently with a spatula until just combined — careful not to overmix.

Transfer the batter to the prepared tin and bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean.

Glaze: Mix icing sugar with 1 tsp of earl grey-infused milk at a time until it reaches your desired thickness. Drizzle over the cooled bread.
