Pickled Red Onions:
1 cup water
1 cup white vinegar
1 cup red wine vinegar
2 Bay leaves
2 tsp whole peppercorns
2 Tbs sugar
2 tsp salt
3 whole garlic cloves
Combine all Brine ingredients to simmer on stove top for 5 minutes. Cool. Strain. Pour Brine over 1 thinly sliced red onion in a glass jar with secure lid. Refrigerate for 2 hours before use. Store in refrigerator up to 2 weeks.
Crockpot Meatballs & Sauce (Serving Size 3 Meatballs, 8pts WW PLAN)
Meatballs, combine:
1 lb lean ground beef
1 egg
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp pepper
1 Tbs Italian Seasoning
1/4 cup Panko or Plain Bread Crumb
Measure out 1oz portions and roll into balls.
-Sear meatballs on all sides, then add to crockpot on low with sauce (see below) for 2-6 hours.
Low Point Tomato Sauce (1/2 cup sauce 0pts)
Combine:
2 cans tomato sauce (no sugar added)
2 tsp garlic powder
1 tsp onion powder
1 tsp salt (+ more to taste)
1 pince red pepper flakes
2 Tbs Italian Seasoning
Air Fried Salmon, Asparagus & Rosemary Potatoes (4pts per serving)
1 cup seasoned air fried potatoes
5 stalks blanched asparagus
5oz salmon fillet
Grilled Chicken and Veg Bowl (6pts per serving)
1 grilled chicken breast, boneless skinless
1/2 cup quinoa cooked in broth
1/2 cup grilled zucchini
1/2 cup grilled peppers and onions
12 slices pickled red onion
1 Tbs Feta crumbles
