Today we shall try a new chicken recipe. This delicious and soft milky, cheesy butter chicken is super easy to make and an improvised recipe of the traditional butter chicken. Soft, juicy and creamy, the chicken pieces are going to melt in your mouth and melt your heart.
INGREDIENTS:
1. For Marination (1 tbs each)
*Tender Chicken Pieces/Cubes (500 Gms Boneless)
*Ginger-Garlic Paste
*Coriander Powder
*Cumin Powder
*Red Chilly Powder
*Chicken Masala
*Salt
*Oil
2. For Blending Mixture
*Chopped Onions (2 medium-sized)
*Chopped Tomatoes (2 medium-sized)
*10-20 Cashew Nuts (paste)
*Ginger-Garlic (paste)
3. For Chicken Butter Masala
*Butter
*Chopped Capsicum (1medium sized)
*Whole Spices (2 Bay Leaves, 2 Cardamoms, 1 Mace)
*Spices (Coriander Powder. Cumin Powder, Red Chilly Powder, Chicken Masala)[1tbs each]
*Tomato ketchup (1tbs)
*Warm Milk (1cup)
*Warm Water (1cup)
*Salt
*Sugar
*Kasoori Methi (Dried Fenugreek Leaves)[1tsp]
5. For Garnishing (As per preference)
*Fresh Cream
*Mozzarella Cheese
PROCESS:-
MARINATION:-
1. Marinade the boneless chicken pieces/cubes with 1tbs each of ginger garlic paste, red chilli powder, salt, chicken masala, cumin powder, coriander powder and oil.
2. Mix them well.
3. Cover and keep aside for 15 minutes - 24 hours.
PREPARATION OF THE BUTTER MASALA:-
1. Take 1tbs of butter in a pan.
2. Add the chopped onions and saute till the raw smell goes off.
3. Add the chopped tomatoes.
4. Add 1tbs of salt.
5. Cover and cook for 5-8 minutes till they turn soft and mushy.
6. Cool the mixture and blend into a smooth puree.
SAUTING THE CHICKEN PIECES:-
1. Take 1tbs of butter in a pan.
2. Add the marinated chicken pieces and cook on high for 3 minutes on each side.
3. Sear the pieces for minutes till they give a charred look.
4. Remove the chicken pieces and keep them covered.
ADDING THE SAUTEED CHICKEN PIECES/CUBES IN THE BUTTER MASALA:-
1. Take 1tbs of butter in the same pan.
2. Add the whole spices and let them sizzle.
3. Add the chopped capsicum and fry them for 10 minutes till they are 70% done.
4. Add the onion and tomato puree followed by all the spices as mentioned above and mix and cook for 1-2 mins.
5. Add 1 cup of cashew paste and cook till the gravy thickens.
6. Add 1 cup of warm milk to make it more creamy.
7. Add 1tbs of ketchup.
8. Add the sauteed chicken pieces and mix well.
9. Add 1/2 cup of warm water and cook until gravy consistency.
10. Cover and cook for 10 minutes till the chicken becomes soft and tender.
11. Add 1tbs of butter to the gravy at the end before serving for a buttery flavour.
GARNISHING:-
Garnish your delicious milky, creamy chicken butter masala with fresh cream and grated mozzarella cheese.
Serve with Basmati rice or Naan or Parathas. Enjoy with your family!! 😋
