Joël Robuchon’s Chocolate Tart
24 cm × 2 cm tart pan
Ingredients & Recipe * (Makes two tarts)
Brush the tart pan with butter and freeze it.
Tart Dough
Cake flour — 275 g
Dark brown sugar — 100 g
Cocoa powder — 25 g
Unsalted butter — 150 g
Egg — 1 (62~65g)
Let the dough rest in the refrigerator for at least 1 hour.
Preheat the oven to 180°C (356°F)
First bake: 15 minutes at 180°C.
Second bake: 10 more minutes at 180°C.
Chocolate Filling
Heavy cream — 250 ml
Dark brown sugar — 50 g
Milk — 100 ml
Dark chocolate — 140 g
Egg — 1 (add when the filling has cooled to lukewarm)
Directions
1. In a saucepan, heat the cream, brown sugar, and milk until the edges just begin to bubble.
2. Remove from heat and add the dark chocolate, stirring until completely smooth.
3. When the mixture is lukewarm, whisk in the egg until fully incorporated.
Final bake: 15–20 minutes at 160°C (320°F).
