🟡 Nimbu ki Khatti-Methi Chutney / Nimba Chi Chutney
⭐ Ingredients (Samagri)
4–5 nimbu (seedless ya beej nikal den)
½ cup jaggery (gud) – swaad anusar
1–2 tbsp sugar (optional)
1 tsp haldi
1 tsp red chilli powder
½ tsp roasted jeera powder
½ tsp black salt
1 tsp normal salt (swaad anusar)
1 tsp rai (mustard seeds)
1 tsp kalonji (optional)
1 tsp saunf (optional)
2 tbsp oil

🟢 Method (Banane ka Tarika)
1. Nimbu ko prepare kare
Nimbu ko achhe se dho kar patle-patle slices me kaat lein.
Beej zaroor nikal dein.
2. Tempering (Tadka)
Kadhai me tel garam karein.
Rai, kalonji, saunf daalein.
Jab crackle ho jaye to haldi aur laal mirch daal kar halka sa bhun lein.
3. Chutney cook karein
Ab nimbu ke slices daal kar halka sa mix karein.
Gud aur cheeni add karein aur dheemi aanch par pakayein.
Thoda paani (¼ cup) daal sakte ho.
8–10 minute tak pakayein jab tak chutney thodi thik na ho jaye.
4. Seasoning
Namak aur kala namak milayein.
Roasted jeera powder daal kar achhe se mix karein.
