Autumn’s second tradition is picking rosehips 🤗
Rose hips are rich in antioxidants and contain high concentration of vitamin C. I make many different things with rosehips: rosehip powder (mixed in yogurt, or smoothies), rosehip jam (wonderful on toasted sourdough sandwiches), Rosehip oxymel (use for colds)…
Today I want to show you how I make rosehip jam. If you have the opportunity to pick or buy rosehips somewhere, please try this 🧡
🇬🇧 Recipe
📝 Ingredients:
⭐️ 300 g cleaned rose hips (700 g uncleaned rose hips)
⭐️ 170 gr granulated sugar
⭐️ About 300 ml Water (which barely covers the rosehips in the pot)
▶️ Instructions:
1- Wash the rosehips. Cut off each end, split in the middle and core the rosehips.
Rinse the cleaned rosehips and place them in a saucepan. Fill with water until all the rose hips are almost covered. Cook for 15-20 minutes. Mix with a hand mixer into smaller pieces.
2- Strain off the rosehip mixture with a denser strainer. Boil the drained rosehip liquid with sugar on medium heat for about 20 minutes (if you want a thicker consistency, boil another 15-20 minutes). Remove any scum that collects on the surface during cooking.
Otherwise, do the test: put a teaspoon of rosehip jam on a plate, let it cool, draw a line in the middle. If the line does not close back then the jam is ready.
3-Pour the jam into a clean jar and store in the fridge.
I like a more runny texture on rosehip jam as I also use it for example on oatmeal for breakfast, on top of dessert or mix it with warm water and drink as rosehip soup 🥰
