Preparation time:- 10-15 minutes
Cooking time:- 10 minutes
Ingredients:-
1 cup Rice
1/4 cup Grated coconut (I used frozen)
1/4 cup Poha/ beaten rice ( soak for 5 min)
Salt ( as per taste)
1 tsp Methi/ fenugreek seeds
With just 5 minutes of preparation a night before, you can make these lovely watermelon dosas for breakfast.

These dosas are insanely soft, fluffy and delicious. This is a perfect breakfast for busy weekdays or weekend brunch. If you forgot to soak rice a night before, you can soak rice for minimum 4-5 hours in morning for making dosas for lunch.
The white part of watermelon attached to to its peel that is usually thrown away is used in this recipe. These dosas are so flavorful with big hit of smell and taste of watermelon. You can also add edible red piece of watermelon to the batter to give that lovely pinkish colour.
The consistency of the batter should be medium thick. Do not make them too thin. Do not spread the batter using the ladle to make thick dosas. They will be super soft and fluffy.
You can use almost every bit of a watermelon. You will only need to discard the thin touch green peel.
This dosa is economical. I mean you are making food out of something that is usually a trash. Can’t get cheaper than free, right?
Watermelon rind has a crisp texture, almost like a cucumber and holds up well to heat- which makes it great for cooking.
Benefits:- watermelon rind is full of vitamin c, B6, A , potassium, zinc.
