🥣 Easy Healthy Maharashtrian Breakfast: Poha (Beaten Rice)

🧾 Ingredients (serves 2):
1 cup poha (flattened rice, medium or thick)
1 small onion – finely chopped
1 green chili – chopped (optional)
½ tsp mustard seeds
5–6 curry leaves
1 small carrot – grated (optional but adds nutrition)
2 tbsp peanuts
1 tbsp oil
¼ tsp turmeric powder

👩🍳 Instructions:
1. Rinse the poha under running water in a strainer. Let it sit for 5 minutes to soften.
2. Heat oil in a pan. Add mustard seeds, curry leaves, and peanuts. Sauté till peanuts are crisp.
3. Add onions and green chili; sauté till translucent.
4. Stir in turmeric and grated carrot.
5. Add softened poha and salt. Mix gently on low flame for 2–3 minutes.
6. Turn off the heat, add lemon juice and chopped coriander.
7. Serve warm with a side of curd or a cup of chai!
