"No Oven" Roast Beef Recipe Share

Ingredients:
Pot Roast:
•2kg Beef Shortplate Slab (you can use beef belly, beef kenchi,camto-just have the bones removed,boneless brisket with fat)
•1 whole white onion
•1 small carrot
•2 stalks of celery
•fresh rosemary
•rock salt and pepper
•5 cups water
•Boil 1.5hrs in low heat/rest/freeze/reheat/slice
Pink Mashed Potato
•Boiling water
•salt
•1kg skin on potatoes
•1/2kg peeled and diced sugar beet (beet root)
•1 Bar diced Margarine-not butter
•boil potatoes for 25mins,peel, mash
•boil sugar beets for 15mins in 1/2cup water
•mix add salt to taste
Mushroom gravy
•1 cup hydrates dried shiitake mushroom
•500ml or 2 cups beef stock
•1/2 cup water (adjust to your liking)
•1/4 bar unsalted butter
•3 Tbsp flour
•pinch of fennel seed
•250ml/1 cup all purpose cream
•salt and pepper to taste
•250g blanched french beans
Assemble in a baking tray serves 10pax
