I’ve made it my way: using up leftover tikka marinade (no waste in this kitchen), adding achar masala for depth, and finishing with a glossy sauce that’s perfect with yoghurt & mint dip or sweet tamarind chutney.

Tomato puree, white wine vinegar, sugar, spices, water
