Ingredients:
Chicken breast fillet (500g) cut into 1x1 inch cubes
Butter (50g)
Lemon (1 tablespoon juice/ 1 medium)
Egg (1) need egg white only
Chicken stock cube (1) mixed with 1 cup water OR use readymade stock
Garlic (3 teaspoon/ 12g/3 medium cloves) finely chopped
Parsley (2 tablespoon/ 5g) coarsely chopped
Corn flour (3 tablespoon) to marinate the chicken
Corn flour (1 tablespoon) for the slurry
All-purpose flour ( ½ cup) to marinate the chicken
Oregano (½ teaspoon)
Salt (½ teaspoon) to marinate the chicken
Black pepper powder (½ teaspoon) to marinate the chicken
Oil (1 cup) to deep fry the chicken
Slicing & Dicing:
Take the chicken breast fillet (500g) and slice into 1x1 inch cubes
Chop the garlic (3 teaspoon/ 12g/ 3 medium cloves) finely chopped
Coarsely chop the parsley (2 tablespoon/ 5g)
Slice the lemon (1 tablespoon juice/ 1 medium)
Preparation:
Now take a bowl and put the chicken
Now marinate with Black pepper powder (½ teaspoon) and Salt (½ teaspoon)
Mix with your hands
Now add egg white (1) and mix again
Now add the all-purpose flour (½ cup) and mix with your hands
Now add 3 tablespoon corn flour and mix with your hands
Now take a blender and add 1 chicken stock cube along with 1 cup water and blend thoroughly OR use readymade stock
Squeeze the lemon
Prepare the corn flour slurry (1 tablespoon) mix with 1 tablespoon water
Cooking:
Now take a fresh pan and add 1 cup oil and turn on medium heat
Now add the chicken into the pan and deep fry for 4-5 minutes or until golden brown
Now take it out on a dish and keep aside
Now take a fresh pan and put it on heat at medium flame and add the butter (50g)
When the butter has melted and starts bubbling then add the garlic (3 teaspoon) and fry for 1 minute
Then add the chicken stock (1 cup) and cook for 30 seconds
Now gradually add the corn flour slurry while constantly stirring and cook for 10-15 seconds
Now add the lemon juice (1 tablespoon) and mix and cook for 10 seconds
Now add the fried chicken and mix
Now add the oregano (½ teaspoon) and mix
Now sprinkle with coarsely chopped parsley (half quantity only) and mix
Now garnish with the remaining leftover parsley
