I have yet met anyone who doesn't like bagels. We stopped eating the store bought ones when our tummies always felt bad afterwards. That is, until two years ago, I learned how to make the Einkorn sourdough version of bagels - thanks to Carla Bartolucci. I have now adapted the process to my own. Here's a video I share with you how I make mine.

If you are interested in cold fementing, here is how I do it:
After I formed the dough from the shaggy mess or during what they call the bench proof, I moved the dough to the fridge, covered. Aftler 45 hours, I took it out and let it set on the countertop, out of the bowl, for 30ish minutes before forming it into eight bagel shapes, then let it rest 60 minutes more, covered with plastic and in the dark place before processing them through the boiling and baking parts.
