📌 Recipe High-Protein Pumpkin Pasta Sauce
📝 Ingredients:
For the Pumpkin Protein Sauce:
🔹500 g pumpkin (any variety)
🔹1 bell pepper
🔹3 small tomatoes
🔹1 onion
🔹 whole garlic
🔹Olive oil
🔹200 g cottage cheese
🔹50g cream cheese
🔹30 g grated cheese
🔹Pasta cooking water
🔹Spices: salt, pepper, curry, turmeric, paprika, chili flakes

Pasta:
Your favorite noodles (gut-friendly option: buckwheat pasta)

How to make it:
Chop pumpkin, bell pepper, tomatoes, onion and garlic.
Drizzle with olive oil, season lightly, and roast at 180°C for 30 minutes until soft.
Add all roasted vegetables to a blender with cottage cheese and a splash of pasta water.
Blend until creamy and smooth.
Toss with cooked pasta and adjust seasoning to taste.
Serve warm and enjoy the coziest bowl of fall pasta!
