🥗 Cucumber Paneer Bowl
🧂 Ingredients
🧀 200 gm Paneer (cut into cubes)
🥒 1 medium Cucumber (grated or finely chopped)
🥛 1 cup Dahi (curd)
🌰 1 cup Makhana (fox nuts)
🌶️ 3 Dry Red Chillies
🥜 2 tbsp Roasted Peanuts
🍋 ½ Lemon (juice)
🧂 Himalayan Salt (to taste)
⚫ Black Pepper (to taste)
🛢️ 1 tbsp Oil

👩🍳 Preparation Steps
1. Soak & Grind Paste
🥣 In a bowl, add makhana + 3 dry red chillies.
💧 Pour 1 glass of water and let it soak for 5–10 mins.
🔄 Transfer soaked makhana & chillies to a mixer, squeeze ½ lemon, and grind into a smooth paste.
2. Make Cucumber Dahi Mix
🥛 Take curd in a bowl.
🧂 Add Himalayan salt, black pepper, and grated cucumber.
🥄 Mix well to form a thick refreshing base.
3. Prepare Tempering (Tadka)
🔥 Heat a little oil in a pan.
🌶️ Add 1 dry red chilli + peanuts.
🍳 When they turn golden, pour this tadka into the cucumber-curd mix and stir nicely.
4. Coat & Fry Paneer
🔥 Heat a tawa.
🧀 Coat paneer pieces with the makhana-chilli paste.
🍳 Shallow fry till golden brown and crisp on the outside.
5. Assemble the Bowl
🥗 In a serving bowl, spread the cucumber-curd mix.
🧀 Place the fried paneer on top.
🌿 Garnish with a sprinkle of black pepper or coriander (optional).
