Keto Pancake Bites:
Ingredients:
4 eggs
1/4 granular sweetener (I used Lakanto golden)
1/2 TS vanilla extract
1/2 cup coconut flour
1/4 butter (melted)
1 TS baking powder
1/2 TS salt
1/4 TS cinnamon
1/3 cup water
Any toppings you want
Directions:
Preheat the oven to 325 degrees. In a blender or food processor add eggs, granular sugar, and vanilla extract. Blend. Then add the coconut flour, butter, baking powder, salt, and cinnamon. Blend until everything is incorporated. Add 1/3 cup water and blend again. Add 1 TS to your mini muffin pan. Then add any toppings pushing down just a little into the batter. Bake for 20-25 minutes. So many options! Enjoy!
