Tomato Bread
1 1/3 cups milk
2/3 cups Grape-Nuts Cereal
2 1/4 cups all-purpose flour
3/4 cups sugar
1 1/2 teaspoon salt
1/4 cup shortening, melted
2 eggs, beaten
1 cup chopped tomatoes
3 teaspoons baking powder
In a small saucepan, heat the milk until bubbles form around the sides of the pan. Pour the warm milk over the cereal and allow it to cool.
Sift together the flour, sugar, baking powder, and salt in a large bowl.
Stir the melted shortening, eggs, tomatoes, and cereal mixture into the flour mixture, stirring until moistened.
Spoon the batter into a greased 9 x 5 x 3 loaf pan and bake for 1 hour at 375°. A toothpick should come out clean.
Cool in the pan on a rack for 10 minutes and then turn out and let cool completely. Wrap in saran wrap and refrigerate overnight. Serve warm with butter or cold with cream cheese.
