Here’s a simple recipe for making Dry Potato Peas Sabzi (Matar Aloo) :
Ingredients:
2 cups green peas (fresh or frozen)
2 medium-sized potatoes (boiled, peeled, and diced)
1 tablespoon oil (vegetable or mustard oil)
1 teaspoon cumin seeds
1 teaspoon mustard seeds (optional)
1 medium onion (finely chopped)
1-2 green chilies (slit or chopped, adjust to taste)
1 teaspoon ginger-garlic paste (optional)
1 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon coriander powder
Salt to taste
Fresh coriander leaves (for garnish)
Instructions:
1. Prepare Ingredients: Boil and peel the potatoes, then cut them into small dices. If using fresh peas, shell them. If using frozen peas, wash and keep them aside.
2. Heat Oil: In a pan, heat the oil over medium heat. Once hot, add the cumin seeds and mustard seeds (if using). Let them splutter.
3. Sauté Onions: Add the finely chopped onions to the oil and sauté until they become translucent and lightly golden.
4. Add Spices: Stir in the ginger-garlic paste (if using), green chilies, turmeric powder, red chili powder, and coriander powder. Cook for a minute until the spices release their aroma.
5. Add Peas and Potatoes: Add the green peas and diced potatoes to the spice mixture. Mix well to coat the vegetables with the spices.
6. Cook: Add salt to taste and mix again. Cover the pan and cook for about 5-7 minutes on low heat, stirring occasionally, until the peas are tender and the potatoes are well combined with the spices.
7. Final Touch: Once done, turn off the heat and garnish with fresh coriander leaves.
8. Serve: Serve the dry potato peas sabzi hot with roti, paratha, or rice.
