Belacan is a shrimp paste, also known as shrimp sauce, is a fermented condiment common in Southeast Asian and Chinese cuisines. It's made mainly of finely crushed small shrimps or krill combined with salt. Belacan is is mainly used as an ingredient for cooking.
峇拉煎 (Belacan马拉盏) 做法跟虾酱和虾膏很相似,都是用小毛虾和盐,经发酵和太阳曝晒制作而成,去掉大部分水分后放入钵中舂成泥状酱料,再放在阳光下曝晒。峇拉煎主要是用来作为配料。
How to Make Belacan
峇拉煎食谱
♦️(Recipe 食谱)
Bubuk (small shrimps) 小毛虾 1kg
Salt 盐 70g
Fresh and low salt version
新鲜少盐版本
Instructions:
1. Combine 1kg of Bubuk (small shrimps with 70g of Salt and mix well.
2. Store them in a container and wait for fermentation overnight.
3. Next day, take them out and dry under the sun to let go excess amount of water.
4. Crush them into sand sauce mixture manually. Or use blender to crush them.
5. Dry the sand sauce under the sun again.
6. After drying, it’s now a Belacan.
7. Mould the Belacan into brick shapes, then cut into small bars. Dry under the sun.
制作方法:
1. 将1公斤Bubuk(小毛虾)和70g 盐充分混合。
2. 将它们储存在容器中发酵一夜。
3. 第二天,将它们取出并在阳光下干燥,以去掉多余的水。
4. 将它们压碎成泥状酱混合物。可以放入钵中舂成泥状或放入搅拌机打成泥状。
5. 再放在阳光下晒干。
6. 晒干后就是峇拉煎啦。
7. 将峇拉煎塑造成砖形,然后切小块条即可。放在阳光下晒干。
