Ingredients:
14 oz. package dried black beans
2 quarts water
1/8 tspn baking soda
1/2 tspn ground orengano
3 1/2 tspn cumin
1 green pepper (cleaned and quartered)
1/2 onion (finely chopped)
2 tbsp minced garlic
1/4 cup Spanish olive oil
3 tbsp cider vinegar
1/4 cup Sherry wine (or dry white wine)
1 tspn salt
1 1/2 tspn cumin
6 cups cooked white rice
2 plantains (unripe or ripe)
Instructions:
Rinse beans and soak with water, baking soda, oregano, 2 1/2 tspn cumin, and green pepper in large pot overnight. Next day, boil water and it’s contents over medium-low heat for 3 hours or until beans are tender. You may need to add more water so the beans don’t burn. When beans are 30 mins away from being done, sauté onion, garlic, and olive oil in small pan until translucent. Add a few spoons of black beans into onion/garlic mixture and sauté. Pour mix back into large pot of black beans, add vinegar, wine, salt, and remaining cumin. Cook for remaining 20 mins and start on plantains. Cut plantains into 1-inch diagonal slices and sauté in separate pan with olive oil 2-4 mins per side or until golden brown. This recipe used unriped plantains so they will be firmer than ripe plantains. Either ripeness can be used. Salt to taste. Cook rice to package instructions. Serve beans and plantains over rice.
