1. The Aromatics
One medium Onion
3 stalks Green Onion
4 cloves Garlic
2. The Mushrooms
Mushrooms
1/8 tsp Sugar
1/8 tsp Salt
1 tsp Rice wine
3. Beef Marinade
(360 g) Beef
1 tsp Soy sauce
1/2 tsp Dark soy sauce
1 1/2 tsp Oyster sauce
1 tsp Sugar
1 tsp baking soda (the key for tenderizing!)
2 tsp Corn starch
1/8 tsp Black pepper powder
6 tsp Water
1 tsp sesame oil
4. Stir-Fry Sauce
1 tsp Dark soy sauce
1 1/2 tsp Oyster sauce
1/2 tsp Sugar
2/3 cup Water
1/8 tsp Black pepper powder

How to cook:
First, add oil to the pan.
Sauté the white part of the scallions and the onion with sugar and salt.
Then remove them from the pan.
Add a little more oil, add the mushrooms, season with sugar and salt, then add the rice wine and sauté until the alcohol evaporates. Remove and set aside.
Add oil again, then sauté the meat until browned. Add the garlic, then add rice wine and let it evaporate.
Add soy sauce and oyster sauce with a bit of sugar and mix well.
Add some water and let it cook until the sauce thickens and the liquid reduces.
Finally, add back the green part of the scallions, the onion, the white part of the scallions, and the mushrooms.
