Chhole Kulche / Matar Kulche is one of the best options for Indian breakfast and snacks as well. Chhole Kulche is originated from Punjab but loved all over the country. We call it Matar Kulche also in Delhi. This is quite easy recipe with scrumptious flavor. Generally Matar Kulcha is made with All Purpose Flour but today we are making it with Rava (Suji).

1CUP = 250ml SERVING – 8-10 Kulche
INGREDIENTS USED:-FOR KULCHA
Rava (Suji) – 2Cups
Wheat flour - ½ Cup
Powdered Sugar – 1tbsp
Baking Powder- 1/2 tsp
Baking Soda - 1/2 tsp
Vegetable Oil – 1tbsp
Luke Warm Water for Kneading – As required
Salt – ½ tsp
Curd – 4tbsp
Nigella Seeds (Kalonji) for garnishing
Chopped Coriander leaves for garnishing
INGREDIENTS USED:-FOR MATAR (CHHOLE)
Yellow Dried Peas (Batana) – 250gms
Salt to taste
Turmeric Powder – ½ tsp
Vegetable Oil – 1tsp
Green Chutney as required
Tamarind (Imli) as required
Lemon juice as required
Hot water as required
Onions, Tomatoes. Coriander leaves, Green Chillies – Fine chopped & as per taste.
Salt, Black salt, Red Chili Powder, Roasted Cumin Powder – as required
FOR SALAD :-
Onions,Beetroot, Ginger,Green chilies, Tomatos – Cut in Stripes
IMPORTANT TIPS:-
Tip1. Do not forget to grind Rava (Suji) into fine powder.
Tip2. Do not use too sour curd.
Tip3. Knead well with palm to form it into soft dough.
Tip4. Knead again into soft dough & rest it for 1 hour minimum Or overnight if possible.
Tip5. Roll it with oil or Maida as per your convenience.
Tip6. Do not skip on this water spray over the Kulcha and sides also.
Tip7. Cover all the Kulcha with kitchen cloth prevent them from drying out.
Tip8. You can use market made Imli pulp also instead of making this Imli water.
Tip9. If you want completely mashed Matar(Chane) then add ¼ tsp Baking soda also at the time of boiling.
Tip10. Cook it for 2-3 minutes on high heat before adding spices and all.
Tip11. You can add spices, onion, tomatoes, coriander leaves, chutney and lemon juice according to your taste.
Tip12. Serve them hot with lots of green salad and pickle.
