2:1 ratio soy to mirin
Fresh egg yolks
If mirin isn’t something you can consume, I recommend diluting some seasoned soy sauce with water (possibly 3:1 ratio) ideally making your own seasoned soy sauce (google this one) with 2 tbsp sugar and 1 cup soy sauce and other goodies like whole spices and aromatics.
Keep refrigerated for up to a week. Optionally at this time you can dehydrate them in low temperature oven at 90°C for 1 to 2 hours. Store in an air tight jar for a month.
