Recipe:
4 eggs 🥚🥚🥚.
A pinch of salt.
1 teaspoon vanilla sugar or vanilla extract.
150 g sugar (3/4 cup / 5.3 oz).
Beat with a mixer for 2–3 minutes.
Mix well until creamy.
180 ml sunflower oil (3/4 cup / 6.3 fl oz).
Grated zest of 1 orange.
Juice of 1 orange.
280 g flour (2 cups / 9.9 oz).
1 teaspoon cinnamon (3 g / 0.1 oz).
Mix well.
15 g baking powder (1 tbsp / 0.53 oz).
Mix everything well until the batter is smooth.
60 g Chopped walnuts (2.1 oz).
300 g grated carrots (10.6 oz).
120 g mascarpone (4.2 oz).
20 cm (8 inch) pan.
Bake at 180 °C (356 °F) for 50–60 minutes.
