The 2 different Rhubarb Wine recipes make 2 very different wines.
The no cook, rhubarb, sugar extraction tends to be drier, crisp, slightly more acidic with flavours of green apple skin.
The stewed rhubarb wine tends to smoother, slightly less acidic, with flavours of sweet pear.
