Hi lovelies, some of you know that we have a city garden with our family and that I made a recipe with the radishes I picked earlier in the spring. Right after the radishes we had a lot of spinach and I was using it for omelettes in the mornings until they had a burst in growth and I had to find other ways to use up all the spinach. That is when I remembered some delicious recipes from Finland and decided to re-create them. The first of these recipes are these delicious savory spinach pancakes or how we call them in Finland pinaattiletut/pinaattiohukaiset. They are really fluffy and flavorful and taste great with some lingonberry jam. You can enojoy them on their own or with a side salad or as a side to some fish or meat.
