RECIPE PANETTONE 2.0 OSCAT PAGANI
( total final dough 2609 grams)
First Dough:
466 grams high protein flour
166 grams water
100 grams sugar
200 grams liquid sourdough starter ( fed 3 times)
133 grams egg yolks
166 grams butter at room temperature.
Second Dough:
All the first dough
200 grams double zero flour
66 grams water
100 grams egg yolk
166 grams sugar
33 grams honey
40 grams aroma mix
7 grams salt
166 grams butter at room temperature
300 grams candied orange
300 grams raisin
The paper mold I use in this video are for 1 kg panettone 17 cm wide 11 cm high
