Ingredients:
Olive oil
250g Lasagne
1 Onion
1 Carrot
1/2 Celery
200g Mince Beef
200g Mince Pork
Grated Mozzarella
Salt and Pepper
Besciamella:
100g Butter
1L Milk
70g Plain flour
Ground Nutmeg
Method:
1. In a Saucepan place some Olive Oil to medium heat.
2. Add the Onion, Celery and Carrot chopped into regular pieces and leave to sauté for a few minutes.
3. Add the mince Beef and Pork and cook while stirring with a spoon.
4. Boil the broccoli for 15 min, drain and keep some cooking water, then put them in the blender with some olive oil until creamy.
5. Add the "broccoli cream" to the "ragù" with a little bit of cooking water, add salt and pepper to taste, mix and cook for another 5 min.
6. BESCIAMELLA:
In a saucepan, place the butter and turn the heat to medium and let it melt, then remove it from the heat and add the flour, stirring quickly to prevent lumps from forming. Add the milk and put back the soucepan on the heat and stir continuously until it almost reach the boiling point, then add the ground nutmeg, salt and pepper to taste.
7. The "mise en place" is very important to make lasagna, otherwise you will go crazy. So we set our table with a large baking tray, our "ragù", our "besciamella", lasagne and grated mozzarella.
8. Put some "ragù" and "besciamella" in the baking tray and spread evenly (this will avoid it sticks to the bottom), then arrange the first layer of lasagna. Add some "ragù" and "besciamella" again, then mix and spread around the tray, adding some mozzarella on top, add the second layer of lasagne and so on until we reach 4/5 layers.
9. We put our lasagne in the oven for 20 min at 180 °.
Divide into squares and serve hot
