Meals of the week-ish :)

Описание: Hello everyone and welcome to my channel, my name is Rachel - I am a home educating mum of 4. This video is my meals of the week-ish - I am so rubbish at remembering to make these videos I have combined all the clips I have remembered to take into one, so its over a couple of weeks :)

So the dinners are
Home made lasagne and home made chips
Broccoli and cheese soup with home made bread
Sweet potato soup and home made bread
Beef and chorizo stew with home made chips
Potato and leek soup with home made bread
Chicken burgers with salad

I will include the recipes for the stew and the broccoli soup and sweet potato soup.

Broccoli and cheese soup
1 brown onion chopped
1 leek halved cleaned and chopped
Garlic
25g of butter
100g potato
400g broccoli
1 litre of stock
salt and pepper
150ml of milk
150g of cheddar cheese

Put everything except the cheese and milk in and cook for thirty minutes then add the cheese and blend and then add the milk and eat and enjoy!
(I added a full broccoli head and more than 100g of potato and it still worked well)

Sweet potato soup
1 tbsp olive oil
1 onion chopped
2 large carrots
4cm of ginger (I used 2 tsp of ground and It worked fine)
garlic
1/2 tsp of chilli flakes
700g sweet potato
2 litres stock
Salt and pepper

Add onion and garlic and carrots, stir in ginger and chilli flakes and soften
Stir in sweet potatoes and stock, cook until ready and soft. Blend and eat.

Beef Chorizo Stew
400g Beef
200g Chorizo
1 tsp smoked paprika
2 onions
2 cloves of garlic
2 carrots
150g mushrooms
750ml beef stock
1 tbsp tomato puree
1 tbsp worcestershire sauce
1 tsp sage
2 bay leaves

(I double that for our family)
Add everything to the slow cooker for 6-7 hours on low. Serve with chips or mash whatever you prefer :) This recipe, i believe, came from Victoria Foulger here on Youtube xx
