Start your day with this quick, healthy, and delicious Vegetable Suji Upma made with simple ingredients available at home. This wholesome breakfast is light on the stomach, nutritious, and perfect for busy mornings.
📝 Ingredients
• Suji (Semolina)
• Cashews
• Peanuts
• Carrots (chopped)
• Beans (chopped)
• Green peas
• Onion (finely chopped)
• Black mustard seeds
• Chana dal
• Urad dal
• Green chilli (finely chopped)
• Ginger (finely chopped)
• Tomato (chopped)
• Curry leaves
• Fresh coriander leaves (chopped)
• Lemon (juice as required)
• Salt (to taste)
• Black pepper
👩🍳 Cooking Method
1. Heat ½ teaspoon ghee in a pan. Add peanuts and sauté till crisp. Remove and keep aside to add at the end.
2. In the same pan, add ½ teaspoon ghee and roast suji on low flame till aromatic. Keep aside.
3. Heat oil or ghee in the pan. Add black mustard seeds and let them splutter.
4. Add chana dal, urad dal, and cashews. Sauté till lightly golden.
5. Add curry leaves, green chilli, and ginger. Sauté for a few seconds.
6. Add onions and cook till translucent.
7. Add carrots, beans, green peas, and tomatoes. Cook for 2–3 minutes.
8. Add water, salt, and black pepper. Bring to a boil.
9. Slowly add roasted suji, stirring continuously to avoid lumps.
10. Cover and cook till soft and fluffy.
11. Add roasted peanuts, lemon juice, and fresh coriander leaves. Mix gently and serve hot.
