15 lasagna noodles
1 lb. ground beef
46 oz marinara sauce
1/2 cup cooking onion, diced
1 tablespoon minced garlic
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
15 oz ricotta cheese
1/4 cup grated parmesan cheese
2 1/2 cups shredded mozzarella cheese
1 cup spinach, chopped
1 teaspoon dried parsley
Instructions
1. In a deep pan of salted water over medium heat, cook the noodles until just al dente. Drain them and spread them in a single layer on a baking sheet to prevent sticking.
2. Using the same pan over medium heat and cook the beef until browned and no longer pink. Add the onion and garlic and cook for 2–3 minutes, until softened. Stir in the Italian seasoning, salt, black pepper, and marinara sauce. Bring to a simmer, then remove from heat.
3. Spread 1 cup of meat sauce over the bottom of a casserole dish.
4 In a medium bowl, mix together the ricotta, 1 cup of mozzarella cheese, Parmesan cheese, and spinach until fully combined.
5. Spread 2–3 tablespoons of the cheese mixture evenly over each noodle. Add a spoonful of meat sauce, gently roll up each noodle, and place each roll seam-side down in the prepared casserole dish. Spoon the remaining meat sauce over the roll-ups and sprinkle with the remaining mozzarella cheese. Cover with foil and bake at 375°F for 25 minutes. Remove the foil and bake for an additional 10 minutes, until bubbly and lightly golden. Garnish with parsley before serving.
