🛒 Ingredients (Nimbu & Hari Mirchi Achar)
Lemon (Nimbu) – 10–12 (medium size)
Green Chillies (Hari Mirchi) – 150–200 g
Mustard Oil – ½ cup (heated & cooled)
Salt – 2–3 tsp (adjust to taste)
Turmeric Powder – 1 tsp
Red Chilli Powder – 1 tbsp
Crushed Mustard Seeds (rai kuria) – 2 tbsp
Crushed Fenugreek Seeds (methi dana) – 1 tsp
Fennel Seeds (saunf) – 1 tbsp
Hing (asafoetida) – 1 pinch
🍋🌶️ Nimbu Hari Mirchi Achar — Step-by-Step Recipe
Step 1: Prep the Lemon & Chillies
Wash and dry lemons completely.
Cut into small pieces (remove seeds).
Wash, dry, and slice/slit green chillies.
Step 2: Prepare the Pickle Masala
Lightly crush mustard, methi, and saunf.
Mix all spices: salt, turmeric, chilli powder, hing, crushed masala.
Step 3: Combine Everything
Add lemon pieces & green chillies into the spice mix.
Heat mustard oil until smoky, cool slightly, and pour over the mixture.
Mix well so all pieces are coated evenly.
Step 4: Rest & Store
Store in a clean glass jar.
Keep in sunlight for 1–2 days to enhance flavors.
