500 grams bread flour or all purpose flour
400 grams water
12 grams salt
140 grams active sourdough starter
Combine all ingredients and mix well.
BULK FERMENT: Leave bowl on counter for 6-7 hours OR until dough has doubled in size. Occasionally do stretch and folds throughout this time. Do a total of at least 4 stretch and folds over the bulk ferment period.
SHAPING THE LOAF AND BAKING: When dough has doubled in size, place on a lightly floured surface. Gently shape the loaf into a round, and place smooth side down into a lined, lightly floured bannetone basket. Leave the dough on the counter until doubled in size, OR cover tighly with plastic wrap and store in refrigerator overnight. If you are keeping it in the refrigerator overnigh, when you are ready to bake the next day, take the basket out of the refrigerator and set in a warm place while the oven preheats.
Place Dutch oven in oven and preheat oven to 450 degrees. Leave Dutch oven inside oven for 20 minutes
After oven has preheated, carefully dump out dough onto a piece of parchment. With a very sharp knife or razor blade, score the top of the dough. This allows for the expansion of the bread as it bakes.
Remove Dutch oven from oven, and gently place parchment and dough in Dutch oven. Place lid on Dutch oven and return it to the oven.
Bake for 30 minutes at 450 degrees WITH LID.
Bake for an additional 5-10 minutes WITHOUT LID
Carefully lift out baked loaf by parchment paper. Remove parchment and cool completely on a wire rack.
