Patatas Bravas
Ingredients
For the sauce
• 2 tbsp olive oil
• 1/2 small onion, chopped
• 2 tsp garlic cloves, chopped
• 2 tomatoes, blanched and chopped
• 2 tbsp tomato purée
• 1 tsp sweet paprika pw
• 1 tsp chilli flakes
• Salt and sugar to taste
• Chopped fresh parsley, to garnish
For the potatoes
• 250 gm potatoes, cut into 5 mm thick slices
• Oil for frying
Method
• STEP 1
Heat the oil in a pan and add chopped onion for about 2 mins until softened. Add the garlic, chopped tomatoes, tomato purée, sweet paprika, chilli flakes, sugar and a pinch of salt, add little water then bring to the boil, stirring occasionally. Lower to a simmer and cook for 10 mins until pulpy. Blend it to get a smooth sauce.
• STEP 2
Fry the potatoes in hot oil until crisp and golden, toss with seasoning. Arrange the potatoes on plate and spoon over the tomato sauce. Sprinkle with some fresh parsley to serve hot.
