These No-Bake Pandan Coconut Cream Bars are the best when you’re craving a dessert that’s easy, refreshing, and not too sweet! Find @thaotamto full recipe below:

Total Time: 20 mins + overnight freezing time
Number of Servings: 3-4
Ingredients:
Crust:
1 cup graham cracker crumbs
½ cup unsweetened coconut flakes
2 tbsp brown sugar (to taste)
1 tsp cinnamon
3 tbsp melted unsweetened butter
pinch of salt
Filling:
7-8 Pandan leaves
13 oz coconut cream
2 tbsp sugar (to taste)
Coconut shavings (as much as you want)
Pinch of salt
Instructions:
1. Make the crust by pulsing the cracker crumbs and coconut flakes in a grinder/processor. Then mix in the sugar, cinnamon, butter, and salt.
2. Line a pan with parchment paper and press the crust at the bottom. Flatten with spatula then place in the freezer as you make the filling.
3. Blend pandan leaves together with coconut cream then strain the mixture.
4. Mix in the sugar and coconut shavings with the mixture.
5. Pour filling on top of the crust and freeze overnight.
6. Remove from the freezer, let it thaw for 10-15 mins, then cut.
7. Top with more coconut shavings and serve!
