Celebrate Mabon and welcome autumn with a cozy Mabon apple pie recipe and a dash of kitchen witchery! 🍏 This autumn recipe is a delicious way to celebrate Mabon throughout the season but can be baked any time you'd like to work with the abundance of apples.
🍏 Autumn Apple Pie Recipe for Mabon
🍏 Pastry Crust
2 ½ cups flour
1 cup unsalted butter (cold)
Dash of salt
½ cup cold water
Flake flour, salt and butter together.
The water will need to be quite cold. I popped mine in the freezer for a few minutes, adding ice cubes is another common way to chill the water. Then add water a bit at a time until the dough comes together.
Split into two separate balls of dough. Cover the dough in an airtight container or a wrap and then chill.
I’ve chilled the dough for an hour or more in the fridge before but this time I popped mine in the freezer for 20-30 minutes instead.
🍏 Apple Pie Filling
5 Granny Smith Apples
1 tsp Cinnamon
¼ cup Cane Sugar (Brown Sugar can easily be substituted here)
¼ cup White Sugar
(Feel free to add more or less sugar depending on how sweet you like your pies)
1 tsp lemon juice
2 tbsp Flour
Peel and core apples then slice them and place in a large bowl. Add lemon juice and mix. Then mix in sugars, cinnamon, and flour together with apples.
🍏 Apple Pie
Take out the pastry crust and roll half of it, one dough ball, flat* with a rolling pin. Then drape it over the pie tin. Trim off excess dough around the edges.
Roll out the second pastry crust to about the same thickness. Then using scissors, a pizza wheel, or knife cut it into ribbons. Set these aside.
Spoon apple pie filling into the pastry crust. Then create a lattice for the top crust with the pastry ribbons. Create a smooth edge around the pie with a fork. Brush with egg wash.
To make for easy cleaning, place a baking sheet beneath the pie tin while it is baking. That way if it bubbles over clean up is easy.
I baked mine for about 40 minutes at 375 and then 15-20 mins at 350.* The pie is done when you can see the filling bubbling and the crust is golden brown.
🍏 Notes:
*For the bottom crust, I rolled mine about ¼ inch thick though this will depend on how thick you like your pie crust.
**Baking times and temperatures can vary so do feel free to adjust it depending on your oven.
