Recipe:
Meatball mix:
500g minced beef
1 small onion,
1 egg
2 tablespoons of flour
2 tablespoons of oats
Salt, black pepper and fresh herbs to your taste, I used some fresh thyme and rosemary for the meatballs
Sauce base:
4 gloves of garlic
3 bell peppers (does not matter which colours 😊)
3 small onions
4 celery sticks
2 cans of tomato sauce
2 fresh tomatoes
2 tablespoons of olive oil to fry the vegetables for the sauce
2 cups of water (or if you have good chicken stocks at home, feel free to use it instead of water)
Methods:
1. Dice all the vegetables
2. Mix the minced beef with all the listed ingredients in a bowl to form bite size meatballs
3. Use 2 tablespoons of olive oil in the pan and fry and brown up the meatballs, after browning them, take out and set aside for later use
4. Use the same pan and add 2 more tablespoons of oil and stir fry diced onions until translucent before adding the rest of the vegetables and 2 cans of tomato sauce, add 2 cups of water, season to taste with salt, peppers and dry mixed herbs, and then add in the meatballs to simmer for 1 hour 30 minutes. (The longer you simmer the sauce, tastier it becomes! )
Note: (If you do not have the time, 40 minutes will do to cook it, but the longer cooking time the better though. If you choose to shorten the time, don’t forget to turn on the fire bigger to reduce the liquid to thicken the sauce fast)
