Today we're baking! We're making peanut butter chocolate chip cookies. They're gluten free and we also share a substitute to make them vegan as well.
RECIPE
1 cup oat flour
3/4 cup creamy peanut butter
2 tbsp coconut oil, melted
1 egg
1 tsp baking soda
Salt
1/3 cup + 2 tablespoon maple syrup
Preheat oven to 350°
Mix all ingredients together, adding egg and maple syrup last.
Refrigerate dough for 30 minutes
Scoop out cookies on baking sheet and bake 8-10 minutes.
