Canadian wild salmon is cooked in the wood-fired oven with my delicious Japanese BBQ sauce. This dish is a huge favorite of my diners, selling over 6 whole salmon a week in season. Accompanied by tasty grilled vegetables, sweet potato puree, beetroot puree, and cauliflower puree, ass roasted and blended with olive oil.
